Creamy Mushroom and Chickpea Stroganoff

Stroganoff is a Russian dish with a creamy sour cream sauce. Many vegan stroganoff recipes use coconut milk to replace sour cream. I found it was too sweet and not the creaminess that I remember when my mum would make beef stroganoff. I thought cashew cream with lemon would be a great alternative.


Mixed mushrooms such as shiitake, cremini, button and enoki have excellent benefits like providing immune support, helping balance the nervous system, brain health and cognition function, and supporting a healthy inflammation response.



Since every balanced meal needs protein, I added my favourite legume, chickpeas. Legumes are a magical plant food packed with protein, dietary fibre and micronutrients- manganese, folate, copper, iron, zinc, phosphorus and small traces of magnesium, thiamine, vitamin B6, selenium and potassium. Lastly, every plate needs a good amount of greens—a side dish of steamed vegetables to complete your meal.


This recipe serves 4.


You will need:

1 tbsp olive oil

1 brown onion, thinly diced

1 tbsp sweet paprika

1 tbsp vegetarian Worcestershire sauce

400g mixed mushrooms, thinly sliced

150g chicken style stock (vegan)

200g can of chickpeas, drained

3 tbsp cashew cream (recipe in my ebook)

1 tbsp dijon mustard

1 tbsp lemon juice

small bunch of parsley, leaves roughly chopped

250g White rice, cooked


Side of steamed veg

1 broccoli, chopped into florets

1 carrot, chopped

1 zucchini, chopped


How to Make:


In a large skillet add the oil and onions on medium heat; stir till onions soften.


Add paprika and Worcestershire sauce, stir for one minute then add mushrooms and stir till softened.


Add stock slowly while stirring in; add cashew cream and lemon juice and stir till it becomes a creamy sauce. Reduce heat to simmer until it becomes a thicker sauce.


In a small saucepan on high heat add 1 cup of water and bring to the boil. Place the vegetables in a steamer and place it on top of the saucepan. Steam for 5 minutes.


Serve cooked rice, mushroom stroganoff and steam vegetables to each plate and enjoy.
